Traditional Wassail - Bph 12/94 Recipe

Ale or dark beer

Bottle (750ml) sweet sherry

Cognac (Optional)

Brown sugar; packed

Ground ginger

Grated nutmeg

Lemon; sliced

White bread; crust removed toasted, buttered, & quartered (optional)

Directions

  1. Gently heat beer, sherry, cognac (if using) in large saucepan.
  2. Do not boil.
  3. Add sugar, ginger, and nutmeg and cook over low heat, stirring, until sugar is dissolved.
  4. Pour into punchbowl and float lemon slices and toast on surface.
  5. Or, pass toast on a separate platter so people can dip it into drink.
